Coconut Kiwi Parfait 🥥 🥝

Taking a break from Vacation recipes to carry you this lovely & wholesome coconut kiwi parfait😋

For this recipe I used Sungold kiwis 🥝 which have 3x the vitamin C of an orange!! An awesome fruit to eat throughout chilly & flu season – plus an amazing publish Thanksgiving breakfast to replenish nutritional vitamins + vitamins after the large meal!

Recipe is vegan, gluten free, keto-friendly, and paleo-friendly.

Coconut Chia Pudding:
– 1 cup canned coconut milk
– 1/four cup chia seeds
– 1 scoop vanilla protein powder

Layers:
– half cup coconut yogurt
– Coconut chia pudding
– 1 Golden kiwi from zesprikiwifruit, sliced

Assemble the parfait by laying kiwi, coconut yogurt, and coconut chia pudding. Recipe serves 2.

To make keto, use half a kiwi per serving and unsweetened coconut yogurt.
