Creamy Beetroot Pasta
I really like this pasta sauce- not just for it’s vibrant fuchsia coloration 💗 however as a result of it tastes superb but packs within the veggies! 👏🏼

– 2 medium beets, cooked
– 1 cup cauliflower rice
– 2 garlic cloves
– half of tsp Onion powder
– 1 tsp Lemon juice
– 1 tbsp Olive oil
– 2 tbsp tahini
– 2 tbsp water
– Salt and pepper
– half of cup pasta water, reserved
– parsley to prime
– 1 field pasta noodles of alternative
Preheat oven to 400. Coat beets in olive oil, wrap in aluminum foil and bake for 30 minutes. Permit to chill and peel pores and skin.
