Fluffy Lemon 🍋 Olive Oil Cake
Made in a ramekin dish, this lemon olive oil cake serves 1️⃣! It’s gluten free, grain free, and vegan! The coconut flour actually helps this cake rise and gives that fluffy texture👌🏼 It’s naturally candy however not too candy, topping with slivered almonds and powdered sugar provides a superbly candy final touch😋
– 1 tbsp lemon juice
– 1 tbsp olive oil
– 1 tbsp flax egg (1 tsp flax + three tsp water)
– 2 tbsp cashew/ DF milk
– 2 tbsp almond flour
– 1 tbsp coconut flour
– 1/four tsp baking powder
Preheat oven to 350. Add all moist components to a small ramekin dish and whisk to mix. Subsequent add in dry components and fold in. Bake for 15 minutes. High with slivered almonds and powdered sugar.
