Happiness is sizzling soup on a chilly day! 🥰 We made it final week when it was a bit colder in New Jersey.

This recipe turned out so scrumptious – Cauliflower and Crimson Lentil Soup! 🍲

~ RECIPE ~

Components ✨
2 medium carrots, 1 full head of cauliflower, 2 cups of natural vegetable inventory, handful of cilantro, 1 clove of garlic, ginger root, 1 tomato, 1 small white onion, half of cup of crimson lentils, further virgin olive oil, and seasoning (salt, pepper, cumin, paprika, roasted seasoning combine).

Step-by-step directions ✨
1. Peel & cube the carrots 🥕 and onion 🧅.
2. Reduce up the cauliflower into small items.
3. Warmth up a big saucepan with avocado oil. Add in all of the veggies as soon as it’s heat and stir sometimes for a couple of minutes.
4. Within the meantime, minimize up 1 tomato and mince the garlic & ginger. Add to the pot and stir for an additional minute.
5. Then, add within the 2 cups of the natural vegetable inventory, 2 cups of water, and the seasoning. Add in half of cup of crimson lentils.
6. Boil the soup, cowl it and let it simmer for 15 minutes.
