Our spin on succotash 🥰
Components (all natural, at all times): edamame, corn, cherry tomatoes, celery, parsley, yellow onion, pepper, garlic, natural low sodium veggie inventory, small blended potatoes and a few spices!
Recipe:
🧑🍳 Boil some barely salted water over a medium sized pot. As soon as it boils, add the frozen edamame and corn.
🧑🍳 Minimize up an onion, celery, 2 cloves of garlic, pepper, and potatoes.
🧑🍳 Hear up a pan over medium-high warmth with some avocado oil.
🧑🍳 As soon as heated, add the veggies and allow them to prepare dinner for 2-Three minutes. Season with Italian seasoning, salt, and pepper.
🧑🍳 Subsequent, add the edamame and corn to the pan.
🧑🍳 Add 2 cups of the veggie inventory and a little bit of brown sugar. Deliver to a boil after which, decrease the temperature and canopy.
🧑🍳 Whereas it’s cooking for 8-10 minutes, minimize up some recent tomatoes and parsley.
🧑🍳 Add the tomatoes and parsley on the very finish.
Serve with the broth and luxuriate in!
